This 19th century classic cocktail hails from Philadelphia and is making a resurgence on bartops all around the country. Silky, complex, and with a fruity bite, this is not one to miss. Don't let the few additional steps throw you off from making this guy at home. Learning to shake with egg white is a true right of passage for the at-home mixologist. Not sure where to find raspberry syrup? It's easy to make at home in a few minutes, but you can fudge it by muddling 3 to 4 fresh raspberries with some simple syrup.
Here's how we make it at Longleaf. For ease of use, we recommend using a boston shaker and cocktail strainer.
1.5 oz. Southland American Gin
1/2 oz. Raspberry Syrup
1/2 oz. Lemon Juice
1/2 oz. Egg White
Angostura or other bitters
In a Martini glass
- Add all ingredients to shaking tin + ice
- Shake until chilled
- Strain back into shaker discarding the ice.
- Shake (like hell!) again to foam the egg white
- Pour directly into glass.
- Garnish with aromatic bitters.
