Southland American Gin, Raspberry Syrup, Lemon Juice, and Egg White

This 19th century classic cocktail hails from Philadelphia and is making a resurgence on bartops all around the country. Silky, complex, and with a fruity bite, this is not one to miss. Don't let the few additional steps throw you off from making this guy at home. Learning to shake with egg white is a true right of passage for the at-home mixologist. Not sure where to find raspberry syrup? It's easy to make at home in a few minutes, but you can fudge it by muddling 3 to 4 fresh raspberries with some simple syrup.


1.5 oz. Southland American Gin

1/2 oz. Raspberry Syrup

1/2 oz. Lemon Juice

1/2 oz. Egg White

Garnish: Angostura or other bitters


  1. Add all ingredients to boston shaker

  2. Add ice and shake until chilled

  3. Strain back into shaker discarding the ice.

  4. Shake (like hell!) again to foam the egg white

  5. Pour into martini glass.

  6. Garnish with aromatic bitters.
